Serves : 4-6
Ingredients:
- 3 Large potatoes
- 6 parsnips
- 40g butter
- 2 tablespoon milk
- 3 tablespoon sour cream
- chopped fresh chives, to garnish
Method :
- Peel the potatoes and parsnips, then chop into even -sized pieces.
- Cook them in a large saucepan of lightly salted boiling water for about 20 minutes, or until soft.
- Drain well, transfer to a bowl and mash with the butter, milk and sour cream until smooth and fluffy. Season generously with salt and freshly ground pepper.
- Sprinkle with chives and serve at once.
